The University of Connecticut's food truck, Food for Thought, is back up and running after the pandemic forced its closure a year ago.
The truck's chef, Robert Landolphi, is offering dining hall favorites and a new line of appetizers, according to a Food Management report.
This time the truck is working from a commissary kitchen on the campus and menu items reflect those most favored by students — including a sweet-heat chicken sandwich.
"The dining hall currently has no seating, so now students can come out of the dorms and just run up to the truck instead of going inside," Landolphi told the news outlet.
The appetizers include the "tater tumbler," made from dry potato mix with various flavor profiles such as a bacon-spinach-Parmesan option.
"What's nice about this truck is that you're outside, we have social distancing marked and people feel like it's safer, plus you are getting fresh air and enjoying the weather," Landolphi told Food Management.
