Vegan food truck keeps rolling as physical restaurant shutters

Shimmy Shack, a vegan restaurant in Plymouth, Detroit, is closing its doors but its food truck will keep serving up its vegan and gluten-free fare.

Owner Debra Levantrosser, who opened the restaurant four years ago, said her food truck enterprise, as well as her wholesale business, are growing, according to a Detroit News report.

It's the latest vegan eatery closing in the past several months as four others permanently closed, according to the news outlet.
