Vegas restaurant re-emerges as food truck enterprise

Those who loved the former Johnny's Mexican Kitchen in Las Vegas will be happy to hear the restaurant has been revived as a food truck and open for business in the former restaurant's parking lot.

The truck will offer the same popular chili and beans, from 6:30 a.m. to 1:30 p.m. weekdays, according to a Las Vegas Optic report.

The restaurant closed in March 2020 due to the COVID-19 pandemic. Owner Emory Aragon and his son Naithan decided to launch the food truck this past summer.

"It's awesome (to have them back)," customer Jeffrey Gallegos, who ordered green chili, chicken enchiladas, told the news outlet.

Emory Aragon's parents opened Johnny's Mexican Kitchen 40 years ago.
