Vegetarian food truck opens restaurant in Kentucky

Vistro, a vegetarian food truck in Bowling Green, Kentucky, has opened a physical restaurant. It offers a variety of vegan and vegetarian options, according to a report by Bowling Green Daily News.

Owner Melinda Whitfield Gilbert said this is the only vegetarian restaurant she knows of in the city.

"I want there to be choices," Gilbert said in the report. "We liked to eat out, but we learned that there were very few places that had vegan options other than a salad, but most of the dressings weren't vegan, so if you wanted lettuce and a cracker, you wouldn't go hungry, but there just wasn't good, hearty food to eat out."

Currently the restaurant is open 11 a.m. to 3 p.m. It offers food such as marinara spaghetti, Asian pasta salad, Mexican street corn dip, vegan tuna salad sandwich and other items.

Gilbert said that the restaurant offers, "light" food for under $15.
