Vietnamese inspired food truck brings new flavors to Lafayette, Louisiana

The Bayou Bao Co. opened this year in Lafayette, Louisiana. This food truck offers Vietnamese bao buns that are filled with BBQ pork, beef, fish and other items, according to a report by The Daily Advertiser.

Owners Jessica Vo and Paul Drerup said they wanted to bring a new cuisine to the area with this food truck.

"We decided we would do it and do it our own way," Vo said. "And bring different cultures to it, so it's not something that is just traditional baos that you would get in Asia. It's our spin on it."

Their namesake item is the bayou bao with homemade boudin and pepper jack cheese. The food truck also offers soup dumplings and chocolate dumplings on Saturdays.
