One of the newest food trucks in Bellingham, Washington is all about providing comfort food in a community environment.
The Outpost Eats is a beer, food hall and bike shop developed by the Transition Bicycle Company to expand the restaurant's reach in the fall of 2022, according to a report at The Bellingham Herald.
"When we opened Transition Outpost, our vision was to create a place for people to gather and build community. Oftentimes this might be over a shared love of bikes but we were also excited to welcome anyone in the community looking for a great beer selection and a fun place to hang out. Adding food to this vision was a logical next step. We knew it would enhance the customer experience allowing people to enjoy a meal and relax together," Kari Young, Outpost Eats creative director, stated in an email to the news outlet.
The mobile food enterprise offers local beer and often unique dishes, from Vietnamese-style sauces for pork sandwiches and hamburgers served on rice with gravy. It also offers vegetarian and vegan fare.
