In this episode of the Pizza Marketplace Podcast, Pizza Marketplace editor Mandy Wolf Detwiler catches up with Andrew Scudera Jr., owner of The Original Goodfella's Brick Oven Pizza in Staten Island, New York, to learn how pizzerias can use customization and creativity to make their restaurant a standout in the industry.
Scudera, who also runs a pizza school, trains pizzaiolos with a one-on-one approach.
"We kind of mold the course around their concept and what they're trying to do in the pizza world," Scudera said, adding that the students who come through his master class are usually about to open and are honing their skills in the industry.
"A lot of them are green and have never been in the game," Scudera added.
