40-year-old restaurant expands with a food truck business

The Auburn Café, which has been serving customers in Ecorse, Michigan for four decades, has launched a food truck.

It took owner Kosta Callis nearly a year to get the mobile business up and running, according to a News Herald report.

Callis bought the truck in May 2020 and took delivery in late August, but found some challenges with the truck's water and plumbing systems, and getting needed parts delayed its official launch.

Now he's busy scouting locations and getting approvals to operate in local areas.
