Birmingham home to new food truck

The newest food truck operating in Birmingham, Alabama, is Eat at Panoptic Food Truck, which will launch July 3.

The truck is owned and operated by Chef Raquel Ervin and will be serving up gourmet side dishes and special sliders, according to a Birmingham Business Journal report.

The food truck, which will visit neighborhoods and businesses, will be parked at Smokey's Pit Stop starting July 6 on Tuesdays through Fridays from 11 a.m. to 2 p.m. Ervin also operates a catering business, according to the report, and the truck business is phase 2 of her company, she told the news outlet.

"Initially, my plan was to open brick-and-mortar summer 2020 and a food truck in 2021. Within a few weeks time, I switched business plans and went with it. I just know that all things happen for a reason, and with this industry you have to remain ready and flexible," she said.
