Chef expands restaurant business with a food truck

The Bistro 11 restaurant, in Victor, New York now has a food truck operating on site.

The truck effort, according to owner Chef Dominick Dardano, is a way to handle the challenges of the past year that COVID-19 brought to the restaurant industry.

This past April he opened the Two Guys Kitchen & Catering truck and serves lunch every weekday, according to a Democrat & Chronicle report.

"Why let a pandemic go to waste? Do something with it," Dardano told the news outlet. "The pandemic really pushed me to do different things."

Dardano is focused on the food truck at this point but is also booking for events in his restaurant.

"Right now, we're just going to concentrate on this and the catering, doing a lot of small parties inside that we have booked. That's where we're at," Dardano told the news outlet. "To be a business owner, you had to do things different. You had to reinvent yourself."

The truck is parked outside Bistro 11, on West Main Street.
