A Colorado-based food truck that launched as the pandemic began rocking the foodservice industry in late May 2020 has birthed a brick-and-mortar restaurant.
Felipe's 109 is open at S. Academy and Hancock Avenue in Colorado Springs, and the owner said the food truck has helped spur the eatery to a resounding success, according to a KOAA.com report.

"Because of the pandemic, people were looking for food trucks in neighborhoods. People were looking for food trucks on the street because restaurants were closed," owner Felipe Velasquez told the news outlet.
"It's scary obviously and it's joyful at the same time. We didn't expect to have a pandemic before we got the food truck, but when you get lemons and water you make lemonade," said Velasquez.
Due to the ongoing pandemic the restaurant's dining room is not yet open.
