COVID-19 doesn't stop a Utah food truck operator from business launch

The coronavirus pandemic is a challenging time to open any business but one St. George, Utah food truck operator isn't running scared.

Dixie State University student Jurey Beddes shared his perspective in a St. George News report and explains why he hasn't been deterred by pandemic shutdowns and stay-at-home mandates in launching his Popskis Handmade Popsicle truck in St. George.

"You have to be able to talk about the numbers and be completely honest with yourself, not to be afraid of failure or setbacks. If you do fail, keep on grinding on to the next obstacle. There will always be other opportunities," he told the news outlet.

His truck is parked in the Hurst Ace Hardware parking lot at 160 N. Bluff St. from noon to 10 p.m., Monday through Saturday.
