Denver food truck borne from obvious need

The Mac Shack, a Denver-based food truck, owes its establishment to a savvy operator that saw a clear need for mac and cheese in the downtown area.

Owner Shannon Hardenbrook launched her truck four years ago after seeing customer demand for the cuisine at a BBQ truck that would offer it on an intermittent basis, according to a Westword report.

Hardenbrook's truck offers a variety of toppings, from lobster to green chiles, and the business expanded into a counter service at Edgewater Public Market last year. The truck now offers takeout at the market as well as delivery through Grubhub.
