Denver food truck launching physical locations

A well known Denver food truck, Pho King Rapidos, is opening two restaurant locations in the next few months.

The three-year-old food truck enterprise is owned by Long Nguyen and Shauna Seaman, according to a Denver Post report.

The first restaurant will be in Avanti Denver at 3200 N. Pecos Street and open on May 9. The second is planned for this summer in the Park Hill area.

The owners will stop food truck operations at the end of this month.

"We feel really lucky to have this opportunity and want to make the most of it," Nguyen told the news outlet. "Running a food truck has definitely been tough. No part of the process has been easy in any sense. If you can run a food truck and run it well, then you'll probably be up for any challenge. It's the hardest thing I've done in my life."
