Though the COVID-19 pandemic has halted typical food truck operations given closed business districts and stay-at-home orders one event operations manager in Denver has created a workaround to give food truck operators an opportunity to continue serving up fare.
Gabriela Reyes, City of Westminster officials and a shopping center owner, have created The Lot, a food truck rally that serves diners Thursday through Saturday from 5 p.m. to 7 p.m., according to a Westword report.
The rally idea actually predates the pandemic as Reyes was already thinking about doing a year-round food truck park several years ago while living in Austin, Texas.
Six food trucks have signed up to serve at the rally, offering up everything from game-meat burgers to corn dogs and egg rolls.
