A Florida executive chef is transitioning his catering business into a food truck that will boast various food styles in an elevated dining approach.
Rusty Strain, a Pensacola resident, is getting ready to launch A Rustyc Spoon food truck that will offer breakfast and lunch, operating from 10 a.m. to 4 p.m. Tuesday through Friday, according to a report at the Pensacola News Journal.
The truck's name is the name of his former catering operation.
"Believe it or not, A Rustyc Spoon was created for my best friend at the time," Strain told the news outlet. "She was getting married and she wanted me to do the catering. And I said, 'Well, I gotta do it the correct way,' so I opened up A Rustyc Spoon. It started as a joke so we could do the catering, and then we started getting booked almost instantly."
Strain will rotate the truck's menu every two weeks, with American classic first being offered.
"I don't want to continue living my life missing soccer games, birthdays, holidays when I can control my life and make a living doing what I need to do," Strain told the news outlet regarding his switch from catering. "Working 70 hours a week, I felt like it was time to move forward."
