Food truck commissary opens in underserved part of Southern California

Toni Romero, a caterer in Indio, California, recently opened the first Coachella Valley food truck commissary and already has six food truck customers, according to the Desert Sun.

Food trucks can use the commissary to prepare and store food. The facility also accepts used grease and provides a place where food truck operators can park and power up their vehicles overnight. Under county ordinance, food truck operators are not allowed to park their trucks at home.  

Besides offering services to food truck operators, the commissary helps county health officials track mobile vendors, according to the article. 

Food truck advocates have blamed a lack of infrastructure for slow growth of the food truck business in the east valley and nearby desert cities compared with Los Angeles and Orange counties, the article said.
