Food truck expands footprint with brick-and-mortar location

Cadillac's Chicken and Fish, which launched four years ago as a food truck in Louisville, Kentucky, is now launching as a restaurant in Highview.

The southern style eatery, according to a Courier Journal report, is located at 7105 Fegenbush Lane and will open in March. The restaurant will seat 68 and already has 14 staffers.
