The ongoing COVID-19 outbreak is prompting radical change in the food service world and food trucks are not immune.
Many trucks are struggling as events and festivals are being cancelled and postponed given the national mandate to self-isolate and avoid being near or in a crowd.
For one Texas food truck operator the impact has meant redirecting his strategy and becoming more mobile than ever, as reported by KFOX TV.
Rodolfo Motta, owner of Tacos on Wheels, a 10-truck fleet is driving around to serve up its meals, hitting two to three dozen different areas each day in El Paso.
"We go to dealerships, we go to construction sites, any type of business that has factories and people working," Motta told the news outlet. "We have to adapt to the circumstances," Motta said.
