Food truck owner’s dream comes true

A long-held dream of Piedad Carrillo, a food truck operator in Lexington, Kentucky, of opening a restaurant location is coming true.

Carrillo's Mexican restaurant, La Doña, expects to open this month and is co-owned by Sergio Centeno and Maribel Reyes, according to a Lexgoeat report. The restaurant is in the Zandale Shopping Center and will offer an expanded menu including breakfast, lunch and dinner.

Carrillo launched her Tacos La Doña food truck three years ago and it will remain in operation handing event catering.

The name, La Doña, represents a matriarch known for her traditional cooking, according to the news outlet.
