Food truck owners make leap to being restaurant owners

The Eaker Barbecue food truck was well known in Westbury, Texas and doing so well the owners started making plans for a physical restaurant.

Then COVID-19 hit and the plan turned to staying in business as a food truck for the next year, according to Houstonia magazine report.

As the coronavirus began to ebb, the owners, Lance and Boo Eaker, decided to move forward with the restaurant plan but they also had to make a physical move themselves as there was no viable location where they had been running the truck.

So Lance and Eaker headed to Fredericksburg and will open the Eaker Barbecue restaurant by the end of the month.

As for the truck, it's now idle and a fond memory.

"It was a great experience and a tremendous amount of work," Lance told the news outlet. "I probably look 20 years older than I actually am. But it set us up for the next move."
