Fresh Mex food truck rolls into Dallas suburb

Fresh Mex is the latest food truck serving up fare in McKinney, a suburb of the Dallas-Fort Worth area.

The truck's owners, Mark and Jessica Thibodeaux, launched the business in the summer of 2019 and are now at full throttle, according to a Community Impact report.

The truck is finding a loyal fan base at local community events. The owners have started a Fresh Meal Program which offers food to those in need, without any questions.

"I didn't grow up with food insecurities, but Mark kind of did," Jessica told the news outlet. "It was important for us to give back and make sure everyone is taken care of."
