Houston restaurant launching 5-truck food truck fleet

The Mico's Hot Chicken restaurant, in Houston, Texas, is going food truck in a big way.

The brand is launching a fleet of five food trucks with the first truck hitting the road next month serving up the brand's hot chicken sandwiches and fried pickles.

While specific locations have not been released, the food trucks are expected to get a resounding welcome given the popularity of the restaurant, according to a Culture Map Houston report.

One reason the food trucks are expected to find success is that the restaurant started out as a food truck enterprise three years ago. A year later owner Kimico "Mico" Frydenlund and her husband, Chris, opened the brick-and-mortar location.

"We've been in our brick and mortar for almost two years now –– during the pandemic the entire time –– and demand has continued to grow," Mico Frydenlund said in a release. "We're so grateful for the support, and we have a lot of exciting plans in the works that we can't wait to share. We're working hard to get this food that we're so passionate about in more mouths."
