How one Tennessee food truck became a business

The Boro Salad Kitchen, a food truck based in Murfreesboro, Tennessee, was born due to restlessness and its owners' desire to get busy during retirement.

Darlene Pleman-Voakes and her husband launched the truck in late July serving up made-to-order salads, according to a Daily News Journal report, with the goal of simplicity.

The star menu item is a Chinese chicken salad.

"I wanted to bring something good and fresh. Those are the main ideas for our salads, that they are light and colorful, and they are healthy," Pleman-Voakes told the news outlet.
