Food truck operators who had been serving up fare at Idaho's rest areas along state and federal highways are now on the hunt for a new spot.
The federal and state government opened rest stops to food trucks in early May as a way to help both food truck operators stay in business and to feed travelers and truckers as rest stop restaurants closed for nearly two months during the COVID-19 pandemic. Now those restaurants are opening back up and so the food trucks are no longer needed to serve truckers and travellers.
In Idaho, more than 30 permits to operate at the stops were issued, according to CDL Life News report.
