Indiana home to unique food truck born from the impact of COVID-19

The Urban Artisan is a trolley food truck built and operated by Mike and Stacey Spencer in Noblesville, Indiana.

The couple initially pondered opening a restaurant, but the coronavirus pandemic quickly convinced them it wasn't a great time to go that route, according to a Current report

In researching the restaurant industry the duo became aware of the increasing popularity of food trucks and decided to take that career path.

Their initial approach was to park the trolley near business centers and corporate offices, but due to stay-at-home mandates, they pivoted selling to a local VFW branch and using DoorDash to get their cuisine delivered. They're also doing private and corporate events.

"The word is getting out there that we are now taking on events, and it's taking off, which is good because we are trying to salvage what we can of this year," Mike Spencer told the news outlet. "Once some normalcy comes back to everybody's lives, we look to be running every day for lunch and going back to our original plan doing big events like GenCon, Comic-Con and events with the City of Noblesville."
