Jersey food truck a legacy operation

One of the newest food trucks in Somerset County, New Jsersey is about more than offering great wood-fired pizza.

The Nana's Wood Fire Pizza food truck is also a testament to owner Kevin Trimarchi's grandmother, according to a My Central Jersey report.

Trimarchi, who also owns and operates several other food establishments, including 22 West Tap and Grill, Slingin' Dogs and Oink & Moo BBQ & Burgers, said the truck honors his late grandma's legacy as she helped him realize his passion for food and culinary path.

"She was a small little Italian woman," Trimarchi told the news outlet. "She loved to cook, and she loved to give you a smorgasbord of food every time you walked in the door. You didn't leave without a Ziplock of butter cookies. You got a whole tray of cannolis in your face when you walked in the door, and she was shoving them in your face.

"Part of the reason why I grew up in the culinary field, being a chef by trade was all because of my mom and my nana," he said.

After his grandmother Rose passed a year ago he began developing the truck and the menu features sauce and toppings from her recipes.
