Kentucky food truck launching a second truck

The J's Good Grub food truck, in Owensboro, Kentucky, is launching a second truck in response to customer demand.

The first truck, launched in 2018, serves up soul food, such as boom boom shrimp, according to an Owensboro Times report.

The second truck's fare will be more focused on healthy eating with vegan and gluten-free items, such as veggie burgers.

Owner Jeremy Johnson is busy renovating the second truck with new plumbing, propane lines and equipment.
