Lobster roll truck rolling into Virginia

Richmond, Virginia will soon be the home of a Saltys Lobster & Co. food trailer, making its first appearance at the Hatch Food Hall's Anniversary Bash event.

The food truck was launched in the spring of 2020 by Jonathan Kelly who had just closed a restaurant in nearby Roanoke, according to a Richmond-Times Dispatch report.

"I love lobster," he told the news outlet. "When I lived in San Diego, I used to go lobster hooping … and I just said 'Who wants do a lobster run?'"

Kelly runs two food trucks at this point. During a recent event, one of his trucks went through 30,000 lobsters, according to the news report.

If the Richmond location proves successful he plans to expand the fleet.
