Louisiana food truck expands into a restaurant presence

Despite the ongoing pandemic, a Lafayette, Louisiana food truck is expanding its brand with a brick-and-mortar restaurant.

The Taqueria El Mexicano food truck, which launched in 2019, and the restaurant, at 110 Mimosa Place, are run and owned by chef Benjamin Briones who immigrated from Mexico, according to a Developing Lafayette report.

Briones partnered with Rob Caruso, owner of TKO Tax Service, to expand the food truck brand which is known for authentic Mexican cuisine.
