Louisiana food truck operator developing a food truck park

Kevin Colomb, who aims to launch his second food truck in Lafayette, Louisiana, is also busy with plans to create a food truck park.

Colomb runs the Pinchers food truck, which serves boiled seafood, and has leased an empty lot to serve as home to his second truck as well as other trucks. The park would offer outdoor seating, restrooms and a container bar, according to an Acadiana Advocate report.

His first truck has been warmly embraced by the local community.

"The support, honestly, has been overwhelming," Colomb told the news outlet. "People have been driving in from Morgan City, and I had one lady from Houma come in just to try our food. We're excited about everything that's happening. My vision was always to be in Lafayette. I always passed by that lot and thought it was a beautiful piece of property that has a bunch of potential."
