Louisville food truck launches restaurant despite economic challenges

The COVID-19 pandemic has put lots of restaurants out of business or into take-out only, but it didn't stop one Louisville, Kentucky food truck operator from launching a brick-and-mortar location.

The LA Chandeleur now has a sister eatery in Beechmont, according to a Wave3 report.

Food truck operator and now restaurant owner Kyle Thomas said the strategy was born from necessity as the truck was barely able to handle increasing demand.

"The plan was never to go brick and mortar," Thomas told the news outlet. "We just outgrew the food truck, and we didn't have a choice. We either expanded or stopped growing."
