Memphis food truck owners teach basics to food truck wannabes

People interested in learning the food truck business in Memphis, Tennessee can learn from Mariko and Tiffany Wiley, who launched Riko's Kickin' Chicken food truck in 2014 and opened a brick-and-mortar restaurant in 2017, according to a Memphis Business Journal report.

The couple teaches the basics in a class held twice a year at their restaurant at 1329 Madison Avenue. 

They have been holding the classes, which typically cost $75 to $100, for a few years now.

The classes usually have about 10 students and cover code enforcement, insurance, supplies, maintenance and more. Students receive a booklet that the Wileys prepared, and take a tour of their truck.

They also give financial advice on operating a food truck and a restaurant. They said a person should be able start a food truck for under $10,000.
