Truck drivers and travelers taking to Minnesota interstate roadways are getting access to new food options now that food trucks can operate at the rest stops in the state.
Currently Governor Tim Walz is approving food trucks at six highway rest stops to help feed those on the road as most restaurants have closed due to COVID-19. It's also a way to help food trucks stay in business as business areas and parks are empty due to stay-at-home mandates, according to a KIMT3 report.
