While most restaurants are struggling to come back after seven months of rocky business thanks to the coronavirus pandemic, one Missouri food operator is launching a food business.
James Fleming isn't letting COVID-19 stop his Knock'd Out Grill food truck from hitting the road in Springfield, serving customers at 2350 S. Campbell Avenue in the Westlake Ace Hardware parking lot, according to a Springfield News Leader report.
"I got to the point to where I felt like I learned everything and I was like, 'Man, it's time for me to take over my own journey,'" Fleming told the news outlet. "I don't get discouraged. God wakes me up and I go. God has a plan for me."
He offers different fare on various days, such as seafood on Fridays and soul food on Sunday. Fleming's goal is moving from the food truck to a brick-and-mortar restaurant with a boxing and UFC sports theme.
