Nebraska food truck expands into brick-and-mortar despite pandemic challenges

A Lincoln, Nebraska, food truck, Mary Ellen's, is expanding its business operations with a brick-and-mortar restaurant.

The food truck has been operating in Lincoln for three years, according to a 1011 Now report and opened the physical eatery in SouthPointe, at 2801 Pine Lake Road in June.

The owners are adhering to necessary COVID-19 safety and health guidelines, according to the report.
