Jared Bourgeois, owner of Robinson Farm, along with his wife Heather Ingegneri, is seeking approval from the Woodstock Development Review Board to operate a food truck on the farm property. This food truck is called Green Mountain Gumbo, offering Cajun food, according to a report by V News.
Bourgeois ran another Cajun food truck in Virginia and now wants to bring this cuisine to Woodstock to address "the abysmal lack of places to eat in this area of Woodstock," Ingegneri said.
The food truck would offer a Corn Maque Choux made of corn and tomatoes and Chicken and Waffles. Many of its ingredients will come right from the farm.
The food truck would run from 11 a.m. to 2 p.m. Monday through Friday. If approved by the board, the food truck could open as soon as mid-June.
