The New Mexico Department of Transportation, with the blessing of the Federal Highway Adminstration, is welcoming food trucks to serve at rest areas across the state.
The decision offers two benefits: truck drivers as well as travelers will have food options as they travel and local food trucks have a place to do business. It comes at a time when food truck operators are being challenged to stay in business given shuttered business districts and annual festivals where they do a majority of their annual business.
"The food trucks will provide an additional option for commercial drivers and other travelers especially in rural areas in between cities and towns. Our goal is provide as many options as possible for necessary travelers to stay safe and reduce the risk of COVID-19 spread," said DOT Secretary Mike Sandoval, according to a Deming Headlight report.
