North Carolina food truck offers a Rastafarian philosophy

The Vital Seen food truck, in Wilmington, North Carolina offers not only a unique menu but a unique philosophy.

The truck serves up vegan fare with a flare with vegetables front and center, according to a Havelock News report.

"It' not really a meat substitute kind of vegan," Chef Tripp Engle told the news outlet, and that's why the truck's tagline is "Roots Garden Food."

The food truck name, according to report, reflects an island vibe and 'seen' is a connotation about hearing and understanding a person. The menu offers a falafel featuring sesame seeds and dried lima beans as well as vegetable stews.
