Pandemic spurs chef into food truck business

Chef Perry Saito was working in fine dining before the pandemic hit in March, 2020.

Laid off, he pivoted into a new world of foodservice — launching a food truck called Katsu Kart Sando Shop in Charlotte, North Carolina.

It made perfect sense given his background and his family's longtime entrenchment in the food industry, according to a WSCOTV report.

The food truck serves up the katsu sando, a Japanese turn on a cutlet featuring chicken or pork. It's a common food item bought at convenience stores in Japan.
