Wayne Yeh, the owner of two Memphis area restaurants, said food trucks are a good way to explore locations for new restaurants in a guest column in the Memphis Business Journal. Yeh described how he launched a food truck and used it to scout his newly opened second restaurant.
Operating a food truck allows you to gather feedback from customers about what they would like to see in a new brick-and-mortar restaurant and also builds excitement prior to opening, he said.
