One of the newest food trucks in Providence, Rhode Island is all about Latino and Japanese ice cream.
But that wasn't the initial quest for food truck owner Linnette Lopez Torres, according to a Providence Journal report.
Her initial menu was going to be chicken and waffles but then she learned about a Japanese pastry called taiyaki.
Her truck, Helado Taiyaki, has been successful from the very start despite the ongoing pandemic environment.
"Everything I was fearing, all of it just lifted off my shoulders," she told the news outlet. "The business attracts everyone which makes me happy because that's what I wanted to do."
In fact, the food truck success led to a brick and mortar store that opened this past Spring.
Among the best selling ice cream treats is one called the Extraordinary boasting vanilla ice cream in a taiyaki cone with toppings of strawberry drizzle, shortcake crumble and condensed milk.
