Rhode Island food truck, restaurant gaining big fan base

The Kow Kow food truck and its brick-and-mortar restaurant location in Providence, Rhode Island offer up bubble waffles and ice cream, and winter's cold temps aren't stopping fans from enjoying its fare.

Owner Vilada Khammahavong launched the food truck nearly three years ago and the restaurant in the spring of 2021. Now she's thinking of opening another store location, according to a Brown Daily Herald report, with a long-term goal of having a Kow Kow in every New England state.

"It was really just supposed to be a passion project, but I ended up really loving it and it was taking off," Khammahavong told the news outlet. "So I continued to grow and go down that path of the business."
