Seattle home to ramen food truck pop-up experience

Hillman City, Seattle is home to a new food truck pop-up, Ramen Ramen, borne from the Sam Choy's Poke restaurant franchise.

The truck will be located in the eatery's parking lot, off Rainier Avenue, but will not have any overlapping menu items with the Hawaiian restaurant, according to a Seattle Eater report.

Ramen Ramen will offer exactly what its name implies — hot noodle soup. Sam Choy's Poke Co-founder Max Heigh and corporate chef Scott Lutey have crafted a menu with more than a few unconventional ramen soup items, including beef brisket and truffle crab.

It's the latest revamp of Sam Choy's mobile food operations. The franchise's three food trucks have not been in full operation due to the coronavirus pandemic, according to the news report, but are now part of a rotating pop-up approach.

"It's a great use of our food trucks," Heigh said in a statement to Seattle Eater . "For the past few months they've been sitting behind the gate, not being able to serve the community. Our pop-up food truck(s) will be able to create more jobs for the industry, and allow our group to expand its culinary influence in Hillman City."
