Syracuse food truck pivots in wake of COVID-19

The Elbita's Cocina food truck in Syracuse, New York isn't letting the ongoing coronavirus pandemic slow down its wheels.

Born from a catering business, the truck is participating in weekly food events and offering virtual cooking classes focused on its Puerto Rican fare, according to a Syracuse.com report.

Josette Jackson and her husband, Walwyn, are just finishing their first year as food truck operators and are focused on growing the business while following all necessary health and safety protocols.

The truck started off providing delivery only but now Josette is busy teaching local college students on how to create the truck's menu items.

"We're very passionate individuals who love to cook and we just enjoy our time in the kitchen," Josette told the news outlet.
