Texas food truck park breaks ground

Construction is starting on a Texas food park in Copperas Cove.

The Taste of Cove Food Truck park, which recently held a ground breaking event, will be home to eight food trucks as well as restroom facilities and a covered seating area, according to a report at the Killeen Daily Herald.

The park has been a longtime quest for business owner Tasha Roberts who also owns the Sporty Dogs food truck.

"I was too nervous and scared to sketch it out to try to go forward with it," Roberts told the news outlet. "And just one day, I was like, 'You know what, I'm just going to try it.'"

The goal is to have the food truck park open within several months.
