Vegas restaurant reborn as a food truck

The fact that COVID-19 mandated closures shuttered their Las Vegas restaurant, Johnny's Mexican Kitchen, a father and son weren't about to leave the foodservice industry.

They pivoted and have opened a food truck, Johnny's Express, which is located at 717 Grand Ave., the parking lot of their closed venue, according to a Las Vegas Optic report.

Emory Mere Aragon and son Naithan will run their truck from 6:30 am to 1:30 p.m. every weekday.

"We decided to scale down a little," Emory told the news outlet. "It's still the same chili and the same beans."
