Washington business lot will be home to a food truck hub

The Chuck E. Cheese parking lot in Kennewick, Washington will serve double duty as part of a food truck hub for 28 food truck operators.

The hub is the brainchild of Chris Corbin who said it's taken years to get going, according to a Yaktrinews.com report. Corbin and his family run the pizza and children's entertainment location. The parking area is part of a three-acre lot which will be home to the Summer's Hub Food Truck Pavilion, and will also house another restaurant run by Corbin.

"I've been trying for years to get this thing going and we finally got the opportunity to get it rolling and I can't wait to bring it to the Tri-Cities," Corbin told the news outlet. "Where everybody can come, families can come and choose from different offerings from local food trucks — the food trucks can have one place where they go; the electrical hookups."

The hub is on track to break ground this month with construction being completed by spring 2022.
