The Project BBQ food truck offers Las Vegas foodies everything from smoked pulled pork to smoked brisket to BBQ chicken sandwiches, tacos, smoked ribs, brisket empanadas, baked beans and bacon mac n cheese. Owner Rex Bernales launched his truck to share his love of everything BBQ.

How did you come up with the name: Partners are in construction and wanted to something that would include them.

What's the best part of being a food truck operator: Being able to engage with guest personally!

What's the worst part of operating a food truck:Finding good help

What lessons have you learned since launching the truck: Staying way ahead of yourself so that your not stuck trying to dig yourself out!

Is there anything you would have done differently at the start: Not on top of my head.

Any tips/advice to others thinking of launching a food truck: Do your research on great locations! That's the key!!!
